I initially thought it was a lot of sugar as well.
I prefer not adding any sugar to my own tomato based sauces, as is done with Sauce Tomat. I let onion, and carrot sweeten the sauce. However, that is what the customer wanted. Personally, when I have the ingredients, and time, I like to make Escoffier's version of the mother sauce- Sauce Tomat. It has tomato, flour, carrot, onion, veal stock, and pork belly, garlic, and butter in it. I would be great for a pulled pork style of pizza.
