As I explained in my "Welcome" post, I'm a burned-out musician/instructor who has decided to change career paths and get into cooking professionally. I have previous restaurant experience and some cooking skills/knowledge, and am fortunate enough to have landed a job at a good restaurant that is willing to train me. I am currently in my fourth week there (part-time), and it's been a wild ride! If there's interest, I'd like to use this thread to talk about my experiences as I learn the ropes, and I'm sure I'll have plenty of questions for the pros out there.
