Saw a recipe for this where it said to simmer the peas after soaking them for 30 minutes. Well it takes me 2 hours on medium heat with extra water added besides that which covers them to get them mushy.

    Hi Thebeloved,

That recipe sounds pretty much spot on, it's roughly how long mine take.  Just remember to add any salt at the end of cooking or it will make the peas tough rather than turning to mush, I think.  Well, that's what's done with dried beans, so I'm assuming it;s the same.

the recipe will get you peas. the mushy takes a wee bit longer. Its not an exact science : )   Like DC says, dont add salt till the end.

In the UK you buy the peas with a block of bicarbonate of soda in the pkt. This keeps the peas green. Without it they tend to go greyish.

If you havnt tried it before, regionally in the the Uk, they drizzle with malt vinegar and white pepper just before serving
