Mother's Day

    How was your Mother's Day? Mine, well, had 4 casualties, three dishwashers and one food runner. Ran out of chicken CHICKEN! (after I suggested we buy more from doing "low" counts last night but I gues the Exec didn't feel it necessary). 30 minute ticket times, myself and the other sous were playing catch up all day and night. Don't get me wrong, I'm fine with getting my a** kicked but after pointing out that we are going to run out or we are low on this and that all week and nothing happens, it's kind of hard to just put the day off as being "busy as hell"

    It went well, overall;

    -14 no-show resos. (covers, not tables)

    -One of my cooks effed up big time when prepping though... screwed up 200 portions of tiramisu. Had to remake... a hellishly expensive f***-up. Apparently "gently fold" means "whip the sh*t out of..." in her world.

    My guests are happy. So I'm happy.

    My cook effed up huge, so I'm pi$$ed.

    Wait, are you saying 4 people got fired/quit or what? If so, that's crazy!

    Service at our place went fine. I was working the night shift which was busy but I guess the real business went down at brunch. The rush started rather early(around 5ish) and thus ended early as well(8:30ish), which was nice. All in all, everything went well, the customers seemed quite pleased and chef wasn't yelling too much, success!

    Super smooth.

    200ish covers, we split them up into 3 seatings(2 @ 75 at 9am & 11am, & the reaminder at 1pm plus various walk ins). I put the stand mixer on line & made godawfully huge amounts of hollandaise.

    We were organized & prepped for it this year.

    Last year we did a catering gig for 500ppl offsite the night before & it was a clusterf***.

    Well, the food runner decided his shift was over at 6:30 and left without asking. 2 dishwashers decided the same thing at 3:00 after being told they needed to stay and finish their shift. Not to mention one of the 2 that left tried starting a fight with another dishwasher. And the fourth, another dishwasher, tried calling off 1 hour before his shift was to start because a family member was having surgery, so he didn't show after I told him he still needed to come in. Luckily 3 of my dishwashers from the morning stuck it out thourgh the dinner shift.

    My first Mothers day off in 16 years sooooo, mine was great. Actually I felt kinda guilty but doctors orders so it is what it is. I know they did about 400 for brunch, down about 250 from normal. I think because Easter was so close. We did about 700 for Easter. I was told it went off without any problems.

    Did about 220 covers.

    180 between 9:30 and 2:30.

    Good flow. Good communication between FOH and BOH. Tried to use 2 way radios, but went to using runners instead about 10 minutes into service. /img/vbsmilies/smilies/smile.gif

    Looking forward to a slow night tonight, but one never knows what will happen. It may be one of those special nights where you are setting up for a 30 cover night and wind up turning 80.

    I REALLLLLY hope thats not the case though.

    Slow for what I was used to at Cora's but we did about 150 covers... average Sunday I have heard and it was nice weather so I would not be surprised if people went to where there were patios to sit on instead of inside a little tiny place. If we had a patio we would have done much more than that.  It was a struggle though as I am new to the stupid nonstick flat tops and I still need to get the techique down for them on eggs....

    As a mother... awesome... my akm/sous booted me out of the kitchen and told me to get lost I am a mom too and go home and enjoy my day.  He did the same thing with me for my bday today.. he told me to eff of and go home and not worry about the kitchen he has it covered... I will be doing the same for him on fathers day and his birthday too....

    That's awesome to hear you have that kind of support from your akm/sous...It's great that you have people you can count on.

    He is a good guy and on Father's Day and his Birthday I will totally do the same for him. 

    He knows I do at least a 9+ hour day every day and he is more than capable of running the line on his own so when he says get lost I don't ask questions and I make myself scarce...
