Unfortunately, Joey, all the simple ones I've tried seem to lack the body and depth of flavor of the true gelt.
So, yeah, when I make mole it's complicated and time consuming. That seems to be the trade off. It's like my printer used to say: you can have it good, or you can have it fast, but you can't have it good and fast.
