mini bacon wrapped corn dogs/pepper jack cheese sauce

    mini bacon wrapped corn dogs

    so i was do some experimenting for the truck again and thought about mini bacon wrapped corn dogs. because i want to deep fry this i'm assuming i will have to cook the bacon before i wrap it. not sure how else to do it because doing it raw, the bacon doesn't get cooked. any suggestions?

    pepper jack cheese sauce

    i found out that pepper jack doesn't melt well. i would like to make it into a sauce for macaroni but am totally in the dark on how to do this. all suggestions greatly appreciated /img/vbsmilies/smilies/confused.gif

    Pepper jack does melt well!  I put it in macaroni and cheese all the time.

    You have to fold your cheese into a bechamel sauce, that's the standard and best way to make mac n cheese.  

    You have to experiment with the bacon, my guess is that it would cook in the deep fryer.

    this may be an obvious questions but i assume the easiest way is to shred the cheese first; or are you making the cheese itself from scratch?

    i got the corn dog recipe online using jiffy cornbread mix. i didn't care too much for it and with the raw bacon wrapped, would not cook all the way and i don't want to make anyone sick. i'm going to try again using pancake mix and see how that works

    Not sure what you mean about the cheese? I make the bechamel from scratch and then add the shredded cheese to it.

    Here is a thread for making cheese sauces.   Pepper Jack will work just fine with the method I posted, you can actually use almost any cheese with this method.

    You can par cook your bacon and hold it just don't let it get crispy, or you'll be chopping it up and adding it to your cheese sauce.  Hey - that's not a bad idea.  /img/vbsmilies/smilies/crazy.gif

    make a form the size of the mini dogs, wrap bacon around it and deep fry until crisp. Slip mini dog into it, stick, batter, fry. I would wrap the bacon them a fold over the top so it doesn't slide off the mini dogs. Could precook a bunch and have it ready to assemble. Don't get to crisp or it won't handle well.
