Middle Eastern Charcutire

    I am just curious if there is any Charcuterie in the middle east. Any dried lamb or anything like that?

    Merguez is a well known lamb/beef sausage.

    Because of cultural and religious restrictions on pork, it's a different approach to fat and casing though the same concepts apply.

    Pastrami originated in Turkey as Basturma.

    Merguez are delicious! But they are North African, not Middle Eastern. 

    And yes, there are all sorts of hams, sausages, pâtés etc.. coming out of the middle east, they even have poultry saucissons. I know Lebanese use chicken, turkey, pork, beef, duck, goose, rabbit... personally I am not aware of any Lebanese lamb charcuterie, and I'm not familiar with the other middle eastern countries food.

    In origin, but they're popular throughout the Middle East too.
