Merkt's Port Wine Spread clone

    I just signed on as chef at a joint that is all about old-school Midwestern shit brought up a few notches. One thing that the owners are super into is making their own version of Merkt's Port Wine Cheddar spread. Has anyone ever done something like this? I've tried it once so far, and while the flavor was good, the texture wasn't right and I couldn't get those bright red swirls.

    Also, they're trying to find a container similar to the one Merkt's comes in, so if you've got a lead on that I'd appreciate it.

    pretty much beer cheese but with wine I would think. also look at obatzda for inspiration

    as to swirls, divide your batch in two near the end color one as wish, then recombine incompletely.
