Mayonnaise From Boiled Eggs Fridge life?

    Hello, does anyone know the fridge life for mayonnaise made with boiled eggs? i know its 24h from mayonnaise made with raw yolk, but how about boiled?

    Boiled eggs usually last about a week, give or take a day, and depending on how much vinegar you use maybe a couple extra days could be squeezed out of it. Hope this helps :)

    I’ve made mayo with boiled egg yolks in the robot coup before. Actually comes out pretty good but each yolk holds a bit less oil.

    What I’m curious about is a 24 hour shelf life in homemade mayo. I keep and use mine for several days and have never heard of just 24 hours. Being that at work I’ll make 60 liters at a shot I’m wondering the reason.
