worked a batch of marmalade today and it would not set up. The recipe was followed as well as procedure, when i brought the problem up we added.75oz of extra pectin. Yet it did not fix it, does anyone have some insight to this situation?

    recipe

    4 cup OJ

    7 cups sugar

    supremes of 7 oranges

zest of 7 oranges triple blanched and battoned

    3oz of pectin

The oranges we got in were not the ripes 3 or so stil had a little green near the branch end.

Trust me, the color of the orange skin is no indication of ripeness!

I've eaten beautifully orange oranges that were not ripe as well as dark green oranges that were perfectly ripe.

    It's probably not acid enough.

A lot depends on the type of pectin you are using.
