In making a cilantro pesto am I supposed to try and remove as much of the stem material as possible.

Maybe the stem material adds digestion or is linked to some ancient mystical fokelore and will bring the consumers wisdom?

I want to make the besto pesto.

Just cut the stems off the bunch, don't need to use only the leaves.

I make a cilantro pesto that includes garlic, arugula or spinach, olive oil, fresh lime juice, parmesan and a drop of cream.  Nuts are optional, and always add at the end. If you want a bite to it, add your favorite chili.
