making pashka

    I made pashka, using the recipe that came with the mold. But because I couldn't find farmer cheese, I used ricotta and the result was grainy. What substitutes would you suggest? Do you think cottage cheese would work better and if so, what kind. I live in a small town and depend on run-of-the-mill grocery stores.

    One thing you can do when subbing ricotta for farmer's cheese is to drain some of the excess liquid by spreading on several layers of paper towels, then pulse it a bit in a food processor.

    This will smooth it out some and give your the drier texture similar to farmers cheese.
