I am looking for some new twist on mexican type food for a small take out joint.

Going to serve only breakfast and lunch. My clin
etal will probably be blue collar and office workers. Want a quick in and out menus
Tortas, marinaded meats, grilled
Fish tacos, w/fruit salsas
Home made mole is always a winner
Breakfast, some types of egg or vegetable type enchiladas, chorizo and potato empanada's
Breakfast Burritos are always a favorite. We actually have burrito Friday ever week. ( Bacon, Chorizo, Chili Verde, Ham, and no meat) Lunch Tostada Compuesta, taco specials, and enchiladas. Mexican chopped salad I could go on for hours
