Looking for recommendations on French dessert/patisserie classes/school...?

    Hi:

    I am wanting to take classes on how to make just French desserts/patisserie, etc.

    I don't want to do the full blown French cooking school - meals, etc...

    Any idea of a good French patisserie school, etc...?

    Chicago?

    If you want to stay in the USA, I suggest the Culinary Institute of America. Ferrandi in Paris is a GREAT school!!
