Looking for a great bread recipe for Grilled Cheese

    I'm looking for a good recipe for bread to slice and use in grilled cheese.  I make brioche buns for hamburgers for the restaurant but as loaves for grilled cheeses, the crumb is too delicate.  You can't butter the bread.  I am looking for a bread recipe with a firmer/denser crumb that can be sliced and spread with butter.  I use fresh yeast so a recipe using fresh yeast would be preferable.  Any type of bread will do, I'm open to any suggestions. Also I only have a 5-qt KitchenAid so recipe that yields 2-3 loaves would be best.

    What about just a regular white loaf?  I don't think a brioche would be right for grilled cheese anyway, but it depends on how "different" or "gourmet" you want to be.  To me, grilled cheese is best on good old-fashioned white bread.

    AnnieW is right. A classic pullman-style white loaf (pain de mie) would fit the comfort-food traditionalism of grilled cheese.  What kind of cheese do you use?

    For more adventure, there are potato bread recipes that give you a nice even crumb plus an extra flavor that should work well with cheese.  I'm thinking of "Roasted Potato Bread" in Jeffrey Hamelman's _Bread_ (discussion at http://www.thefreshloaf.com/node/10934/roasted-potato-bread-hamelman039s-quotbreadquot) or the potato bread in Carol Field's _Italian Baker_, which has an extremely fine crumb.  (page 132 of the new revised edition, also http://www.seriouseats.com/recipes/2012/02/the-italian-bakers-pan-di-patate-recipe.html).

    You could experiment with a little whole grain, but seems to me the bread wants to be in the background of this dish, and relatively lean.
