Lobster Scampi & Polenta

    Lobster is always a good idea, no matter the occasion, but the dish gets exponentially more delicious when served alongside creamy polenta and garlic chips. Prepare this for your next date night at home to give your S.O. an extra special meal they’ll never forget.


    Ingredients:

    - Garlic Chips
    - Canola oil
    - 3 cloves of garlic, thinly sliced
    - Kosher salt

    - Polenta:
    - 2 tablespoons of canola oil
    - 1 shallot, minced
    - 5 cups of lobster or shrimp stock, warmed
    - 1 cup of quick-cooking polenta
    - 1 cup of grated Monterey Jack
    - 1/4 cup of heavy cream
    - 1/4 cup of creme fraiche
    - Kosher salt and freshly ground black pepper

    - Lobster Sauce:
    - 3 tablespoons of butter, at room temperature
    - 2 cups of lobster meat, cut into bite-size pieces
    - 2 cloves of garlic, made into a paste
    - 1/3 cup of white wine
    - 2 tablespoons of chopped fresh parsley
    - 2 sprigs of fresh tarragon, leaves removed and chopped
    - Zest of 1 lemon
    - Fresh chervil sprigs, for garnish
    - Freshly ground black pepper
