In my experience, it is best to do a few practice runs with a stop watch, just from point of timing, because live television time always goes much quicker than you realize.

You don't want to have a canned line of patter ready or anything, but you want to make sure that you are comfortable enough with your set up and the production of it that you can fit in what you want to accomplish in the time slot.

I have seen a lot of tv segments where the chef shoots from the hip, but unfortunately his gun is still in the holster when the time is up! /img/vbsmilies/smilies/chef.gif

Me having had broadcasting experience in the non culinary media field, like with any TV or radio show, you must plan ahead and do plenty of food preparation before the show starts, so you look professional, organised and not look like an idiot running over time.

appreciate the comments.   i went ahead and just approached it like an ordinary photo shoot and justhad more stuff ready to show off then needed.  that not only made me look ready i was super relaxed and comfortable when we actually shot the piece.

Good for you. That is the best way to do things in broadcasting shows.
