    Some of you may recall that I took a new job a few months ago.  As always there's a honeymoon phase; all the bad apples can keep their shit together for a while, but after a month or two people's true colors always come through.  So today I fired my Sous.  He's young and shockingly immature, and just not a leader.  I'd sat him down several times and made my expectations clear and let him know that I only needed him around if he made my job easier, not harder.  It's hard to row a boat when not everyone is rowing together.  He had a lot of people that didn't want to be scheduled with him but of course a couple buddies, so one cook walked out with him.  The line cook that quit was a pretty good guy but I'm glad his true nature showed itself sooner as opposed to later.

    Still, I feel much lighter.  At some point it's a good feeling to prune all the dead wood so the rest of the tree can flourish.  I've got a couple tough weeks ahead me while I get staffed up again but every challenge is also an opportunity.  In this case an opportunity to get the right people in the kitchen and a staff that will fully buy in to what I'm trying to do.

    I think I will have my new Sous hired tomorrow.  These things don't appear out of nowhere and I knew given enough rope the guy would eventually hang himself./img/vbsmilies/smilies/wink.gif

    I hired the new Sous today.  This one is a known quantity as we worked together for a few years at a previous job.  The next couple weeks will be a bit long I'll grant but things should be moving the right direction.  The hours are less tiresome at the moment since the mood of the kitchen is a lot better.

    At times like this I'm reminded that life is 10% what happens and 90% how you deal with that stuff.

    I survived the weekend, and my new Sous is onboard next week, so I should be in good shape.

    My Sous started today, just PT days until he's finished at his other job.  Probably my first day off in Dec will be at Xmas (closed for two days) but things are getting a lot better already- addition by subtraction.

    Two minus a negative one equals three. Basic math definitely applies to employees and can be used to solve labor issues. Glad it is working out

    Tonite went pretty well.  It was fairly busy but went even a bit better than last weekend.  Just one big evening shift to go til I'm back up to full strength, at least management-wise.  You kind of rethink what is possible after a stretch like this.  It's definitely challenging to run through the holiday season at literally half staff levels!  We're closed Xmas Eve and Xmas Day, and that will be my first day off in December./img/vbsmilies/smilies/crazy.gif   I'm looking forward to Xmas a bit more than usual this year./img/vbsmilies/smilies/wink.gif
