Lettuce on a Gourmet burger?

    I convinced my Chef to let a burger slip onto the menu so we're doing a burger special as a trial run tomorrow. He feels as though we should use arugula tomorrow but arugula just seems to bitter to add to a burger. He alsodoesn't want to use your typical romaine/iceburg lettuce.what are some good substitutions to give that fresh crunch?

    I'm half tempted to just use pickles instead of lettuce all together

    I would do pickles and arugla! I think that's a great mix! Or how about some shredded red and purple cabbage? Or is that too weird? Lol

    I kinda wanna keep this whole sandwich together, no random fallen soldiers on the plate.

    Right now what I want on this burger goes as followed

    Patty

    thin sliced pork belly

    Smoked Gouda

    ring cut pickled onion

    ??? (Pickle/lettuce)

    Chipotle Mayo

    I think you need some type of lettuce/leafy green as the garnish!

    To be honest the advantages of doing burgers is because almost anything goes, IMO. 

    If not lettuce i would use Arugula, or Watercress... no stems though. Arugula is probably less bitter then Escarole, and i think it could be nice with some gouda. 

    That or Kale...
