Leeks

    How do I wash leeks without slicing and chopping them up?  I'd like to roast them cut like medallions but don't know how to get the dirt that is trapped in there.

    Put a lot of water in your sink. Remove the top green part of the leeks and save for soup or stock. Cut leeks in rolls, put into the water. Rub a few chunks of leeks between your hands, keeping them in the water; as if you were washing your hands. Do it gently or the rolls will fall apart.

    Leave the leeks in the water for a while; this will allow for the sand to sink to the bottom of the water. Gently remove the chunks of leeks which will float on top of the water.
