Layered Cheesecake help.

Ive been looking for how to tackle a cheesecake with two layers of cheesecake and a thin layer of fruit in between, and Im not seeing anything. Also I am not sure how the assembly will work.

I'll take a stab at this one for you.

You'll make 2 different cheese cake batters. The first one will be very thick (cream cheese, eggs, sugar, and vanilla)

You'll pour that into the cracker lined spring form pan. 

Next spread dollops of fruit, not a layer.

The fruit must be cooked like a pie filling. (fresh fruit when cooked releases liquid and will screw up the cheese cake batter.)

Lastly make a second cheese cake batter from 1/2 cream cheese, half sour cream, egg yolk, (only) sugar, and vanilla.

Pour this over the fruit layer and bake in a water bath at a low temperature until set.  300 for about an hour....turn off the oven and allow to cool down inside.

Pie filling may sink as well.

I am thinking the fruit needs to be run thru a processor and bound with something.

More batter?

Didn't @foodpump  solve this problem a few years ago?

I have done this before. You have to bake your cheesecake in 2 stages. First you bake it only half filled with your cheesecake batter at low temperature until set and the take it out fro the oven, let it cool a bit sit so is firm enough on top to hold your fruit filling ( I used cherry pie filling  out of the can but made it thicker with a corn starch slurry) You CAREFULLY add your cool filling over the baked first layer of your cheesecake before you top it with the second layer of cheesecake batter and finish baking long and at a lower temperature than normal till set. You have  make sure to your crust does not burn since it take twice as long in the oven until the second  layer if filling is done.

You  could also use an apple or a peach filling: I just like the cherries more.

Thanks guys. The filling i wanted to use was chocolate raspberry, because i want choclate but not a fan of full chocolate cheesecakes.

I just had a thought for an easy fix that might work better. What about just doing a thick creamcheese icing ontop? I think I might go that route if I cant get it working

Just melted chocolate with fresh raspberries stirred in might work as your  filling between layers of  cheesecake.(maybe you have to add some raspberry jam for  better and stronger flavor?)

Please let us know how  turned out.

Yeah this is going to be for thanks giving so it wont be for a bit. Just still theorycrafting how the assembly will go down
