Lang Smoker installed in a commercial kitchen

    With the proper ventilation system, does anyone see a problem with a smoker such as this being installed in commercial kitchen? I'd have it outdoors, but I'm worried about controlling temperatures in the winter time. Not to mention, it would be a lot more convenient to have access to it in the kitchen.

    Shouldn't be a problem as long as the smoke out take feeds directly under the hood.

    Where i live that is soooo illegal. Might want to check with your local fire inspector or other regulatory agencies before you try to install an outdoor smoker indoors
