lamb dish

    hi guys!

    i currently have with me thin slices of lamb, i was wondering what i could do with them (cook of course).

    i was thinking of rolling these up with mint, pecorino cheese, thyme, garlic and onions then baking them in the oven.

    has anyone tried this? 

    need suggestions on other ways to cook these in the oven.

    You could try it and let us know how it works out.  My guess is that it would be better if you rolled it up with the cheese and mint and green onion then marinated them in olive oil with garlic and thyme.  Then rolle them up and sear them on the grill before you put them in the oven.  Also if you do put them in the oven place them on a rack because lamb is so fatty that they will be swimming in fat and juices before they have a chance to get a nice color.  What part of the lamb are you using?

    I would give the cheese a miss to be honest, there is enough fat there already. I like your idea though. Maybe try skewering the resulting minirolls to help keep them from falling apart, the heat would penetrate the middle better too. Just a thought.

    o crap . .  my aunt got a different cut ..im left with lamb chops.  will search the rest of the forum to see whats a good marinade.  have to cook em in the oven.. = )

    I wouldn't cook them completely in the oven, if you have a choice. With chops you want to sear them in a sizzling hot skillet, then finish in the oven.

    yeah, i shoudve, was in a time contraint so i instantly placed them in a preheated oven.

    i went with the yoghurt marinade mixxed with onion, garlic, thyme and rosemary.  things came out pretty nice, too bad i couldnt take any pictures. though it would be better if it had a lot more time to marinade..
