I was wondering if anyone had a reliable recipe for the Polish dessert pastry kolacki? It's been a few years since I've had any and wouldn't mind whipping some up for the holidays. thanks!
is there a cheese or poppyseed variation? I have not had these in a long time. I used to like the raspberry version at the local bakery around chicago that sold them. but i remember other flavors.
You can make these with just about any jam/preserve. Some use dates, prunes.....
There are also the Kolaczki's made with sausage or meat filling. I have put a bit of a French twist and made them with a terrine a lapin, cognac, mixed with finely sliced mushrooms and chives, sounds terrible but....mais je l'adore. (home one sunday and experimented).....
I personally enjoy abricot filling and raspberry too. Using the recipe posted you can vary it to what you like.
The topping is simple
1 cup sugar
½ cup of flour
1 tsp cinnamon
2 tbsp melted butter
Cheese Filling
½ lb cottage cheese
½ tsp salt
1 egg
½ cup sugar
Poppyseed Filling
1 cup poppyseed , ground
¾ cup of milk
¼ tsp cinnamon
pinch of clove
½ tsp salt
1 egg
¾ cup sugar
1 tbsp flour with butter (paste)
1 tsp vanilla
