Keeping food moist on a steam line while catering.

I use a steam line for some products and wondering if catering, for say 60 people, over the course of an hour, how can I Keep my products moist and not dry out?

Unless you have weird product It will be fine. Although you probably should have all details if you are going to do events. For example 60 people, what is the flow? If you are doing 60 for lunch and everyone gets up at the same time they will all go through in a few minutes. 60 people in two batches? Probably want to use half pans. Stuff like that.
