Just out of culinary school and directionless

    Just Graduated From Culinary School
    I graduated from culinary school about two months ago and now I'm working in a place I absolutely love. However, I'm not sure which direction I should go in my career within the company I work for. I was told by my instructors that my strength is in creating menu item and that the creative aspect of the industry is where I really shine. I can remember all the rules, history, science of cooking down to very fine details. I can also execute the techniques of cooking very well. However, My weakness seems to be in speed and organization. So, I can develop dishes, and cook them well, but I just can't seem to do in in a quick and orderly manner.  Where should I go in my career based on these strengths and weaknesses?

    You are exactly where you need to be at this point in your career. Strong points are well and good as far as they go, but in order to be a well rounded chef, we need to work on our weaknesses. The earlier this happens in a career, the better. Your job doing plate up is pure gold to you at this time. A perfect opportunity to strengthen areas that need to addressed. Seize the moment and use it to it's fullest.

    Your career will develop and take a direction in time. Let it happen without trying to force it too much at this point. Enjoy, learn, and explore right now. Be open, because the more you experience, the better your choices will be later on.
