Hello everyone. I just joined the format today and wanted to give a tad of an intro about myself. I have been associated with food service since the late 60's. I did a 2 yr apprenticeship under a CECACF @ a high class restaurant in upper Michigan. I have done pretty much everything there is to do in the food field, including teaching classes in food service at a tech school. I now have a catering, bbq & custom smoked meat business. Hopefully we can help each other in food knowledge and preparation methods.
