    Hello Everyone!

    I am an avid fan of Junior's Cheesecake. The first time I tasted it was 2 years ago when a friend brought home a slice from NYC. I live in Manila, Philippines, by the way. After taking my first bite, I just fell in love with it! Since Junior's is not available in the Philippines, I decided that if I wanted to have a slice of this heavenly treat on a daily basis, then I would have to duplicate the recipe!!! And I don't mean "create a recipe that comes close to the original," but rather create a recipe that, if placed sided by side with an original Junior's cheesecake in a panel test, it would be so hard to tell the difference between the two.

    One of the God's blessings I am so thankful for is the ability to duplicate recipes with accurate detail. I don't mean this as a bragging right, but rather, I would like use this gift to share with all of you, the recipes I am able to create. It was a daunting task to replicate such an iconic cake...the clone had to look exactly like the original, taste exactly like the original (or come super close to the original's taste), and have a mouth-feel like the original. It is ok to surpass the original, but it was not acceptable to be inferior to it (even slightly).

    I started the research and development phase back in 2011. Within the last 22 months, I have gone back to the drawing board 87 times, used up over 90 kilograms of cream cheese, and had sleepless nights wondering if I am ever going to perfect it. I can get pretty obsessed that way. Friends have brought home boxes and boxes of Junior's cheesecake for me to use as control subjects in my lab tests.

    Fast forward November 2013. It has been a long and exhausting journey, but I believe I finally got it!!!

    And now, I am ready to share with you all!

    I have attached 2 photos with this post...the one with the strawberries is the original Junior's cheesecake, and the one WITHOUT the strawberries in my replicated recipe.
