I have been working in kitchens since I was fourteen, went to culinary school at nineteen, and am now working in a sort of upscale-casual restaurant. I have no fine dining experience apart from the skills I learned in school, and I want to make the transition to a higher quality establishment, but all of the places I'm interested in are asking for 3, 4, and 5 years minimum fine dining experience. How am I supposed to gain the necessary experience? It seems like a bit of a catch-22.
