But It's a bit dry. Not sure what to do with it. Bone-in shoulder. Any suggestions?

I was thinking some kind of stew with tomatillos and poblano chilies but I could easily be persuaded into a better idea.

Chile verde was the first thing that came to my mind too!

BBQ pork sandwiches was second.

Tacos and burritos was third.

Mix it with some iceberg lettuce, kewpie mayo, avocado, jalapenos. Eat it on steamed rice. Add some tortilla chips on top if you want.
