Italian Marinated Seafood/shellfish recipes?

    Our challenge in the summer is we're so busy that we need dishes that are easy to serve. We have access to wonderful fresh shellfish so I'm thinking of a seafood salad similar to ones we had Christmas Eves of my youth. As I recall, they consisted of scallops, shrimp, calamari and mussels. Not exactly ceviche-like, where texture and quality starts degrading on day 2. These salads seemed to get better with age. If I recall they were still safe to eat on day 5 or so. Maybe a bit of quick pickling involved with the marinades?

    Is this a childhood memory gone awry, or has anyone here any knowledge of this dish?

    I believe that you have to brine soak overnight, then rinse and either smoke or cook completely (I prefer smoking) If you don't cook it off, it will all get mealy, then toss in dressing dujour

    Should hold for a few days... alternatively, if you have the wherewithall, perhaps canning?

    Simply spectacular on an antipasto

    Spanish do salad called salpicon, it is mainly shellfish(mussels, clams, octopus, crabsticks), diced tomato, cucumber, bell pepper red onion and red/white wine vinegar and extra vergin olive oil dressing. It is absolutely delicious and very refreshing in the summer.
