There was a container of chocolate ganache lying out (or at least it was labeled that way) and the chef said that it was fudge not chocolate sauce. A server wanted chocolate sauce and I said that we had ganache, but I was wrong. Can someone explain to me how chocolate ganache is fudge?

Ganache is pure chocolate and dairy cream.

Chocolate sauce is chocolate with more cream, or milk, or even water.

Fudge is a candy made up od fine sugar crystals. It may or may not have chocolate in it.

Take your chefs word over the waitress 's definition any day.
