Iron griddle on induction cooktop

    Does anyone know if the reversible iron griddles with work well on an induction burner? I was concerned that the rim of the griddle would keep it off the induction element too high to work. How close does it have to be? Actually touching the surface?

    How close depends on each unit. The instructions on mine indicate that it has to be within an inch, but a cast iron waffle iron that stands about 1/2 inch above the surface wouldn't work.

    Also you need to closely match the size of the cast iron to the layout of the induction coils in your unit. Cast iron doesn't conduct heat evenly and will be very hot over the induction coils and much cooler away from them.
