I own a small, family-owned catering business and we have been in business for 4 1/2 years. We have had a request for in-flight catering for a private aviation company. We have catered in many unusual environments but this is unique and I'm pretty clueless on what in-flight catering looks like behind the scenes. I don't want to give a reply to this potential client with "I have not idea how to do this but, yea, we can do it." Has anyone here done this? I haven't read up on this, yet, as we just received the request and I knew I would get advice and information from you fine, experienced folk here.
