I want to start selling stuff at my local farmers market.  I'm trying to think what could I make and freeze, and pull out the day before, and sell it.

    any ideas ?????

sweet paste tart with chocolate custard   --  but would have to use waxie maze...  but never used it, dont know what the texture would be like.        or go with tart with ganach

brownies,,,   but what kind of frosting should I go with.

    chocolate truffles,

that all I got right now...

Most markets keep track of what all the members sell in order to prevent having 10 stalls selling nothing but cupcakes (soy candles, lavender bubble bath...you get the idea).
Check with whoever approved your app.
Will give you a good idea of what is lacking.
Just keep in mind seasonal favorites are always popular and go from there.

Sorry didn't answer the other part of your question.
Things like sweet breads (pumpkin, banana, zucchini for example) freeze well.
As do butter based cakes and muffins.
Don't know how ganache would hold up after freezing but apple tarts do well if re warmed after defrosting.
Of course fresh is always better and to spend the Friday before market baking and wrapping my products was a kind of Zen experience to me.

    Good times.
