    Hi all,

    First allow me to wish everyone a happy new year, and may the fears held by many people

    be swiftly allayed over the coming months.

    I live in London with my wife Evelyn, although at the moment we are at our home in Florida to escape the UK winter for a while.

    We are both committed foodies who love to experiment and challenge ourselves in the kitchen.  Evelyn who is originally from East Africa is in the final stages of editting her first book on fusion cuisine, combining ingredients and techniques from Africa, the Americas, Asia and Europe.

    My focus is on sous vide and molecular cuisine, having bought books from two of the greatest chefs on the plannet, Thomas Keller ("Under Pressure") and Grant Achatz ("Alinea") over three years ago.  We use sv as the main cooking medium every single week, but the molecular side of my cuisine is reserved for special occasions and entertaining.

    Umami, texture, and plating presentation play important roles in the dishes that I create.  I look forward to sharing some of the more successful ones with the community, but more important to learn from others on this site.

    We have a wide membership - from around the globe and also all levels of cooking ability.  I fall into the 'enthusiastic amateur' band.

    Feel free to join in on any thread you find interesting, or start your own in the relevant forum.  The Professional fora are read-only for those of us who are not employed in any culinary trade, but they still make interesting reading!  The wikis, blogs, reviews, articles and photography on here are sources of much inspiration, too.

    Your interest in molecular cuisine probably means you should read Heston Blumethal's books.  I've eaten at his restaurant a few times - whilst I love SOME of his dishes, there are others that I'd probably never want to eat again.

    Welcome aboard. I am a Food, Wine and Travel Editor for an expat Embassy Row publication still in print and a journalist and blogger living and working in the Madrid Capital though I am an Italian Manhattaner with a Swiss maternal side.

    I have interviewed The Adriás´ ( Ferrán and Albert ), Carme Ruscadella, Quique Dacosta, Paco Roncero, Joan Roca ( sous vide specialist ) and numerous others since I have been here.

    I had lived on South Beach in Miami from 1986 to 1993, however, I have 2 daughters, Naia in Wellington, New Zealand and Nathalia in Zürich, Switerland ... and it gives us a chance to meet up more often this way.

    I had lived in South Miami Beach from 1986 to 1993 and travel there every other year to visit old friends.
