270mm or 300mm? This will be my only slicer. I'm a lefty Classy handle and blade I'm flexible with the steel choice but do prefer something that will hold an edge I'm thinking 300 mm I'm looking for aesthetics and quality --- something that I will keep for the next 10 years and pass on... I retired my old knife that served me well. I now seek a serious upgrade under 500.00 Which brand and steel do you favor or have that fits the bill?
