I need a batter recipe for deep fried chicken for Asian dishes

I use a marinade of rice flour, cornstarch, shaoxing, and soy sauce. Equal parts if I remember correctly. Will have to dig into recipes when I get home...

I use rice flour and a splash of vodka and soy sauce. The vodka helps the batter crisp. It really does work!

I agree on the rice flour. I add an egg yolk but use ice cold beer for the liquid. Makes it very crisp. And even cold the crust is still crispy.
