So I was planning on making potato puree and made brown onion gravy, only I never made the puree. So now I have brown onion gravy in my fridge, and no idea what to do with it. Sure I could make puree but we just ate loads of potatoes. Any other idea?

Make a stew. Or stuff an onion, bake it in the oven. Use the gravy for sauce. Another possibility, grill a portobello and use the gravy for sauce.

I realize your brown onion gravy may not be vegetarian, or it might be, doesn't really matter; just throwing out some other ideas to possibly get creative juices.flowing.

Awendaw Stacks a Native American Cornbread, grilled, layered with grilled Portobello slices and braised Greens, topped with another slice of Awendaw and smothered with a Vegetarian Brown Sauce

Grilled Portobello, Tempeh, and a Trio of Greens Portobello Mushrooms grilled and placed on top of marinated Tempeh slices and served on a bed of sautéed Bok Choy, Beet Greens, and Chard; topped with a Vegetarian Brown Sauce

Grilled Eggplant Bread Pudding a hearty custard of Sourdough, grilled Eggplant, Mozzarella, and fresh Basil, baked and topped with a Vegetarian Brown Sauce

another idea with slight adjustments to the gravy

Cowboy T-Bone seasoned with Cracked Roasted Coffee Beans and Black Pepper, then grilled over Mesquite and topped with a Red Eye Bacon Sauce and caramelized onions

Hahaha!!! And here I thought there wouldn't be any idea as good as potato puree. All of your ideas are great, thanks so much!! Look like I'll have some decisions to make tomorrow or tuesday! /img/vbsmilies/smilies/smile.gif

Ended up making bangers and potato mash. Because you can never eat too many potatoes in one week. Right Kouk? /img/vbsmilies/smilies/talker.gif

Add water or red wine, or both, cook some nice steaks in a pan, and deglaze the pan with it?

Serve resulting concoction with steaks and a baked potato?
