I figured what the heck I'm going to make some anyways.  (After seeing all the delicious photos posted over the past few days).

Well - I have success!  I bit into my first one after I cooled them tonight and WOW they are good!  Now I just have to decide what to fill them with.  Good shell, gooey in the middle, nice feet.  Pretty darn good for my first try

I will post photos of the finished product after I fill them

So here is a photo of some of the macaroons taken as I started filling them.  (Sorry for the less than desirable quality - taken with my cell phone tonight).  These are filled with chocolate kahlua ganache.  I also made a batch filled with white chocolate raspberry ganache and some green ones w/ mint chocolate ganache.  IMO pretty good for my first time and WOW are they ever tasty!

Question about freezing ganache - I have quite a bit of the white chocolate left over.  Was hoping to be able to freeze it and use it to fill cupcakes I am making next week.  Would this be ok given I have already mixed in the raspberries or will the extra moisture content from the raspberries spoil it after thawing?

Thanks so much & will try to find my digital camera to take some better photos tomorrow when i have them displayed at a party I'm going to.

Wow, that's really good! Hard to believe it was the first time you made them!

That is great...it just means you did everything right. That is how it should look. I,m glad you are happy and satisfied of the outcome and not being depressed that the feet do not look rufflely or have more tiny holes than a screen door..good job

I agree with Nathaliee, you were born to make macaroons if they turned out that good on your first attempt. I tip my hat to you.

My first attempt.....oh...not sure I want to go there. /img/vbsmilies/smilies/blushing.gif

Thanks guys.  I had my last interview at a culinary school in town and was telling them of my macaroon experience.  I may have impressed them too haha.

Hopefully one day I can make something as beautiful as Prettycake or Petals  (you two are so inspiring)
