I got the job!

    Well I went for my interview and he hired me on the spot.  We talked about what my role will be and what I am responsible for, where we get our supplies, all of that.  I was surprised to learn that it is one of the top 100 restaurants in Canada as I thought it to be a local little place.  Anyway here is where I am going..

    I start training this week part time and in two weeks I will be there full time as their new Kitchen Manager.   It is alot like the cafe in its size.. maybe it has 30 seats tops, but the prices are good and everything is made on site from scratch.  The kitchen is very small but there is a big prep area downstairs so I see lots of running up and down stairs in my future.

    I'm excited and nervous at the same time!  I know I can do this, I have learned alot here and on the job so now it's my time.  It's going to be hard to quit my current job though.. as much as I know I need to go I really like everyone (well mostly everyone) there alot but I need to do this for me.

    Congratulations and the very best to you.

    The menu has a nice homey feel but with upscale hits.

    I think I would have to order the crabby lobster mac and cheese.

    You know you can handle this menu.

    You can always get a doctors note and have one of those moving chairs installed on the steps.

    Pace yourself and deligate!!!!!!!

    Thanks, Kuan!  Actually I don't mind doing fruits.. it's crepes that I absolutely HATE!

    LMAO Panini!!  Yeah I could ask for a stair master  but then I'd really be that "old bag" wouldn't I?  I am going to be the only female in the kitchen after all...

    Yes I know I can handle the menu and also the specials.  I really like the owner involvement and that he wants someone to run the place as if it was theirs and that is how I have always worked.  I like the menu and the fact that I will be purchasing our food directly from the vendors so I will have a say in what we do or not not sell.

    Thanks Buba!  The worst is yet to come as I have to tell the owners.  I gave the KM a heads up as he would do for me if he were leaving but now I need to sit them down and let them know.  It will be hard but I need to do this for me.  The KM was awesome when I told him... I know he is not happy that I want to go but he is happy for me and knows that this move for me is a good one.

    I'm proud of you, great job............don't get excited about being one of the top 100 restaurants in Canada, there is only 101 restaurants in Canada......don't worry you will do great....ChefBillyB..................P.S. I thought this was spam at first, I almost zapped you

    Congrats on your job Corey!  I'm actually just down the street from you at Cora's.. well for two more weeks anyway...  I've never been to Earl's but I have heard great things about it.

    hats off to you leenie...hope its a good fit...change is good...scary, but good! is the new place on or near the water as the name suggests? even lovelier if it is..the scene around a waterfront is usually so interesting and the surrounding pubs and restaurants usually draw an interesting mix of people...what fun!

    Thanks, Joey!  Yes it is near water... just a short walk down the street is pier 4 park and Bayfront Park.  Hamilton has developed the west harbor area to be parkland and there's a William's Fresh Cafe right beside the water that is always busy.  The new place is small and apparently like us, they are lined up out the door on weekends.

    Thanks Gunnar.  I know I can do it, and I also know that I  have ALOT to learn.  Tomorrow I will be going in for part of dinner service.  The owner knows I am working and he just has me on the floor watching.  I hope he lets me jump in and do some cooking at some point.. I learn best by doing and I'm happy to jump in front of the bus so to speak and work my way out of it. 

    I think my  main owner is trying to give me some sour grapes about it so I will not leave.   When I was paying my tab today (we have to pay for our food and I was out of diet pop at home so I had to buy some) he told me that he has a friend who owns a restaurant on James North (where I will be working) and he told him the story and he said that there was "no way that the diner could afford to may me that salary" and he wanted to make sure I wasn't getting scammed.  I told him that I did my homework beforehand (and I did.. I googled all of the reviews of the place and then his name as a Chef) and it all checked out.  Yes there were a few not so good ones but that just happens in this business.  He can afford to pay me a very good wage because for his first two years in business it was himself and his fiancee during the week working, with part time staff in the evenings and on weekends.  He buys his supplies from local markets and gets it himself.  He has a bulk supplier but only makes an order once a month as they have a strict $500 minimum and the size of the place does not warrant more frequent orders.  His food is cooked from scratch and the rich people who belong to the yacht clubs at the bay LOVE the place and will go there for their lunches and dinners rather than the overpriced diningrooms at the  yacht clubs.  He is a good businessman and he knows his stuff.  My owner was still less than impressed and wanted me to know that his friend thinks I am getting scammed but I feel that he wants me to rethink my decision and I'm afraid that will not be the case.  I have wanted to work at the diner since it opened and now I finally have the chance!!
