How to store my precious olive oil?

    It's hé-ére!

    Straight from the heel of Italy; 5 litres of my beloved olive oil. It's the first time I buy this in that quantity. I normally buy a bottle at a time. I don't even know how long this will last, but in any case, it will be far less than the expiration date expects, whichs is 1 year. It will be used daily in a home environment.

    Of course I want to keep this liquid gold in shape. I'm planning to put it in emptied wine bottles and store in my cellar where it's dark and cold. Do you guys have any other good advice as to keep my olive oil well?

    My family sends me large tanks of olive oil like that from our harvest in greece every year.  I keep the whole thing stored in the cool dark basement.  From time to time we fill up glass jars and bring up stairs to keep in a dark spot, the cabinet under the sink for every day use.  Refill the bottles as needed.  It's a chore but well worth it.

    KKV, does this mean you keep the remaining oil in the tank? I was planning to pour everything asap in bottles. If you have good experience with keeping it in the tank, it would save me extra work.

    Yes I keep it in the tank.  It stores well in there because of the darkness.  Olive oil needs to be stored in a cool dark place.

    Light degrades oil. Heat degrades oil. Cool and dark is the best storage.

    Don't I have to worry about oxidation, exposure to the air? The less oil in the container, the larger the surface in contact with the air?

    Olive oil is not fragile.  How long do you intend to keep it anyway?  My tanks last for a year each and I have no problem with it.  Relax, enjoy.
