How to fix bent knife edge

    Was taking skin off winter squash and torqued blade. Would be a cheap/soft steel...

    How do I fix the slight bend in the edge. It's very near the handle.

    It's an 8" Henckels chef.

    You could try a warranty claim. Barring that, Strop on a brass rod, edge trailing stroke. Light pressure. work the bend out slowly. The steel will be weak in that area until you eventually sharpen past that point in the steel matrix.

    I am a teacher by profession.
    If you are using the steel knife, then you can fix it by removing the rust from the steel.

    I would sytart with a file to remove the bad edge then go to a coarse stone and work the entire length until it is even again, then switch to a fine stone etc... re-edge the blade.
