How long will a fresh lamb leg last in the fridge?

    How long will a fresh lamb leg last in the fridge?

    Should I leave it in the cryovac or open it so it can breathe?

    How long does it have to last? Left in cryovac is better than open. That's why they invented the process. If you open it, the only thing breathing are the bacteria. Cryovac will allow it to last for quite awhile but I wouldn't say how long. Keeping it very cold is important no matter what. You could also brine it which will allow it to last for another couple of days. But the necessary question is how long do you need to keep it. After so  many days, it really isn't a "fresh" leg of lamb anymore.

    Cryovac or Visking is good but it has its bad points. If kept to long the meat sits in its own blood, turns green and smells. Lamb has a shorter exp. date and shelf life then some other meats. After removing from cry wash thoroughly and keep ice cold. If you notice the cryovac product getting a lot of blood in it, and loosening open it up wash and cook or freeze.(assuming it has not been frozen already)
