How do you smoke Oyster mushrooms.

    I am growing oyster mushrooms and would like to experiment with smoking them also drying them.

    Has anyone had any success with this ?

    I have smoked morels and button mushrooms, never oyster. A quick web search says they get tough...

    I have dried Oysters a lot in a dehydrator - it works well, but have never smoked them. I haven't considered smoking them as I would fear to overpower the magnificent delicate flavor that they offer.

    Is the dehydrator designed for this purpose ?

    Do you leave the mushrooms whole or cut them up first before drying.

    I have had limited success by running a fan over some for a couple of days but not sure how to tell if it was succesful.

    Yes, the dehydrator is for the purpose of drying food. I have dried hundreds of pounds of mushrooms, not to mention fruit as well as "raw" dishes.

    For oysters I generally leave them whole unless the are really big (thicker than about 1/4 inch) then I slice them before drying.

    A fan doesn't work all that well, although I have dried mushrooms over a heater vent when the dehydrators were full. The benefit of a good dehydrator is that you have a controlled environment with a thermostat and even drying.
