How do i learn to make a dish (student)

Hey guys

I'm working at a highly popular restaurant in Copenhagen, Denmark. We are primarly working with fish parts and go out for the seaons. We change our dishes every 2-3 month maybe or something like that. 

Here is what i want to learn to do/master:

Making my own dishes... (like if i had a fish called Cod, what could go with that, what should i do as garnish and such?)

all those ideas out of 1 ingredient / meat. 

hope u guys understand me and maybe can help me getting along with this question.
