Go big. We started with one 4 foot chest freezer. Then added a 2 door reach in. A year later we need an 8 foot chest freezer. The following year I finally listened to reason from a far more experienced operator and installed an outdoor 8 x 10 walk in and sold off the others. Best $12k Ive ever spent. It's paid me back 10x that in a few short years.

How Many Pounds of Meat will my Freezer Hold?
A rule of thumb is one cubic foot of freezer space for
each 35-40 pounds of cut and wrapped meat. Allow slightly
more space when the meat is packaged in odd shapes
Freezers are most efficient when packed full.
I would go big and use ice bags to fill in the empty spaces.
Every time you add something remove however many ice bags it displaces.
