India is a vast country with many diverse cooking styles. It would help if you could narrow down your search to a more specific region/style of cooking in India.

It's kind of like asking about Chinese cooking; there's no easy answer to your question without further details and specificity.

if you wish to cook any Indian food apart from vegetarian or fish in a Restaurant its not really about regions its about time.

Madhur Jaffrey is recognised as the doyen of Indian Home cooking in the UK, her method of cooking a Lamb Korma from scratch will take about 2 hrs

Pat Chapman of UK Curry Club fame will cook the same dish in 15 minutes using batch cooking. Both dishes are delicious but do not taste alike. Most Brits including myself prefer the taste of the batch cooking version.

This lady explains some of the method.

here is madge taking up to 2 hrs to produce a very authentic lamb rogan josh,if you wish to make it along with any other lamb dish that may be ordered at the same time  in about 20 minutes .Pre cook the lamb in a spiced broth till tender, then follow her method leaving the meat out. When the sauce is finished put in your portion of cooked lamb and heat. The taste of batch cooking is fresher as the spices have not cooked for 2hrs.
