I am a hotel general manager with a young, but very motivated Ex Chef. I have joined this forum in the hopes that you guys might be able to help me help him better along the way. I chose to give this young man his first opportunity at the lead position after watching him operate at other positions in the kitchen. Out of respect for your site and forum rules about culinary experience I am asking permission to post and participate with you in this manner as I do manage a culinary operation although I am not a chef myself.
