Make your candied citrus peel. To coat it, per cup of granulated sugar, add 3/4 tsp kosher salt, 3/4 tsp powdered citric acid, 1/4 tsp cayenne pepper. That, for me, is on the tame side; your mileage may vary. Play around with it. Szechuan pepper, smoked salt, lime powder... I've been doing this with grapefruit peel. It'll get your attention. cheers.
